Looking over the brilliant yellow fields of canola in North Dakota. North Dakota shines as a leading biodiesel feedstock in the United States. A cultivar of the European rapeseed plant, canola is North America’s own low-acid variety of the flowering oilseed crop. The word "rape" in rapeseed comes from the Latin word "rapum," meaning turnip. Hundreds of years ago, Asians and Europeans used rapeseed oil in lamps.
